Aloo Gobi

Recipe: Vegan Aloo Gobi
Aloo Gobi is a classic North Indian dish that is made with potatoes, cauliflower, and a variety of spices. While it is the common and simple curry we all love, there are many variations of this that are less known. Aloo Gobi has a more international flavor than most other Indian curries. Ingredients

2 potatoes, diced

1 head of cauliflower, chopped

2 tablespoons vegetable oil

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

1 teaspoon turmeric
-
1 teaspoon chili powder
-
1 teaspoon salt
-
2 tablespoons chopped fresh cilantro

1/4 ~ 1/2 cup water
Instructions

Heat the vegetable oil in a large skillet over medium heat.

Add the cumin seeds and sauté for 30 seconds.

Add the diced potatoes and sauté for 5 minutes, stirring occasionally.

Add the chopped cauliflower and sauté for 5 minutes, stirring occasionally. Sprinkle little water when potatoes dry out.

Add the coriander powder, garam masala, turmeric, chili powder, and salt. Stir to combine.

Reduce the heat to low, add 1/4 to 1/2 cup of water, and cover the skillet. Simmer for 10 minutes, stirring occasionally. Sprinkle more water when vegetables are too dry.

Remove the lid and increase the heat to medium. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.

Remove from heat and stir in the chopped fresh cilantro.

Tips
If you don't have cumin seeds, you can substitute with 1 teaspoon of ground cumin. If you don't have garam masala, you can substitute with 1 tsp cumin powder, 1/2 tsp turmeric powder , 1/2 tsp red chili powder (adjust to taste). Coriander powder can be omited.
