Mango Sticky Rice

Vegan Mango Sticky Rice (serving 2)


Ingredients:

  • 2 cups sticky rice
  • 2 ripe mangoes
  • 2 tablespoons sugar
  • 2 tablespoons coconut milk
  • 1/4 teaspoon of salt

Instructions:

  1. Rinse the sticky rice in cold water for 5 minutes.
  2. Put the rice in a pot and add 2 cups of water.
  3. Bring the water to a boil, then reduce the heat to low and simmer for 15 minutes.
  4. Peel and dice the mangoes into small cubes.
  5. In a bowl, mix the sugar, coconut milk, and salt.
  6. After the rice is cooked, add the the coconut milk mixture to the pot.
  7. Stir the ingredients together and cook for another 5 minutes.
  8. Serve the sticky rice along with diced mangoes and top with crispy mung beans(optional) in two bowls and enjoy!
