Vegan Nasi Goreng (serving 2)


Ingredients

  • 2 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon freshly grated ginger
  • 1 teaspoon soy sauce
  • 1 teaspoon sambal oelek
  • 1/4 cup frozen peas
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion, bell pepper, garlic, and ginger and fry until the vegetables are softened, about 5 minutes.
  3. Add the cooked rice and stir to combine.
  4. Add the soy sauce, sambal oelek, edamame, and peas and fry for an additional 1~2 minutes, stirring occasionally.
  5. Remove from heat and stir in the cilantro.
