Vegan Sun Dried Tomato Spinach Pasta (serves 2)
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons sun-dried tomato paste
- 2 cups spinach
- 160g cooked pasta (e.g. penne, fusilli, etc.)
- Salt and pepper, to taste
- 2 tablespoons vegan Parmesan cheese (optional)
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 1-2 minutes, until fragrant.
- Add sun-dried tomato paste and spinac, cook until wilted, about 2 minutes.
- Add cooked pasta and stir until all ingredients are combined.
- Season with salt and pepper, to taste.
- Serve with vegan Parmesan cheese, if desired.
Tips:
- If vegan Parmesan cheese is not available, you can substitute it with nutritional yeast or vegan cheese of your choice.
- You can also add other vegetables of your choice, such as mushrooms, zucchini, or bell peppers.
