Vegetable Biryani

Biryani is a popular Indian dish and I am here to introduce the Vegetable Biryani. It is a delicacy for people who love healthy food as well as those who are vegetarian. This one-pot meal is packed with aromatic spices, nutrient-rich vegetables, and creamy coconut milk. The basmati rice is cooked in a flavorful mixture of onion, garlic, ginger, cumin, coriander, and garam masala, and the vegetables add a delicious crunch. Vegan Vegetable Biryani
Ingredients(Serves 2)

2 cups basmati rice

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

2 cups mixed vegetables (e.g., peas, carrots, cauliflower, bell peppers, potatoes)

1/2 cup t coconut milk
-
1 cup water
-
1/4 cup fresh cilantro, chopped

Salt, to taste
Instructions

Rinse the basmati rice in cold water until the water runs clear.

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the ginger, cumin, coriander, and garam masala and cook for 1 minute.

Add the mixed vegetables and cook for 5 minutes.

Add the water or coconut milk and bring to a boil.

Add the basmati rice and stir to combine.

Reduce the heat to low, cover, and cook for 15 minutes.

Remove from the heat and let sit for 10 minutes.

Fluff the biryani with a fork and stir in the cilantro.

Taste and adjust the seasoning with salt, if desired.
