Mushroom and Lentil Shepherd's Pie (Serves 2)


Ingredients

  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cups mushrooms, diced
  • 2 cups cooked green lentils, drained and rinsed
  • 2 cups vegetable broth
  • 2 Tbsp. tomato paste
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. smoked paprika
  • Salt and black pepper, to taste
  • 2 cups mashed potatoes

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Heat olive oil in a large skillet over medium heat. Add garlic and onion and cook, stirring occasionally, until softened, about 5 minutes.

  3. Add mushrooms and cook, stirring occasionally, until softened, about 5 minutes.

  4. Add lentils, vegetable broth, tomato paste, oregano, thyme, smoked paprika, and salt. Stir to combine.

  5. Bring to a simmer and cook, stirring occasionally, until the mixture has thickened, about 10 minutes.

  6. Transfer mixture to a 9x13-inch baking dish.

  7. Spread mashed potatoes over the top of the mixture.

  8. Bake for 30 minutes, or until potatoes are golden brown.

  9. Let cool for 10 minutes before serving.


Tips

  • If you don't have smoked paprika, you can replace it with regular paprika.
  • If you don't have green lentils, you can replace them with black or brown lentils.
