Massaman Curry

Vegan Masaman Curry is a popular Thai dish with a stimulating, rich taste and fullness. Made with red chili paste, curry powder, coconut milk, potato or sweet potato, onion, tomato, carrot and soy sauce, this vegan massaman curry will satisfy your taste buds. You can also eat it with rice. The ingredients are simple and the preparation time is short, making it perfect for a busy weeknight dinner.

Vegan Massaman Curry (serves 2)


Ingredients

  • 1 teaspoon Red Chili Paste
  • 2 teaspoons Curry Powder
  • 1 tablespoon vegetable oil
  • 2 tsp lime juice
  • 200ml coconut milk
  • 2 potatoes or sweet potatoes, cooked, peeled and cut into cubes
  • 1/4 Onion, cut into cubes
  • 1/4 Tomato, cut into cubes
  • 1/2 Carrots (option)
  • 2 tablespoons light and dark soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons roasted peanuts (option)

Instructions

  1. Heat the oil in a large saucepan over medium heat.
  2. Add onions, tomatoes, Red Chili Paste, Curry Powder and stir until fragrant.
  3. Add the 150ml coconut milk and 2 tablespoons water and cook until thick.
  4. Add soy sauce, sugar, potatoes or sweet potatoes and carrots and stir until combined.
  5. Cover the saucepan and let the curry cook until the vegetables are tender.
  6. Add the 50ml coconut milk and lime juice.
  7. Simmer for an additional 2~3 minutes.
  8. Serve the curry with roasted peanuts.

Tips

  • If you don't have Red Chili Paste, you can replace it with red curry paste.
  • If you don't have tamarind paste, you can replace it with lime juice.

Red Chili Paste

  • 2 tablespoons of red chili

  • 1 tablespoon of galangal ginger

  • 1 tablespoon of lemongrass

  • 1 tablespoon of onion

  • 1 tablespoon of garlic

  • 1 tablespoon of cumin powder

Put the above ingredients in a food processor and grind them finely.
