Vegan Pad Thai


Ingredients (Serving 2)

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/2 cup firm tofu, diced
  • 200g rice noodles (soaked in water for an hour)
  • 1 tablespoon vegan mushroom sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 tablespoons chili sauce
  • 1 tablespoon soy sauce
  • A handful of mung-bean sprouts
  • 2 tablespoons chopped green onions
  • 1/4 cup chopped roasted peanuts
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over high heat.
  2. Add garlic, green onions and ginger and cook until fragrant, about 1 minutes.
  3. Add tofu and cook for 2 minutes.
  4. Add noodles and cook for 1 minutes.
  5. Add vegan mushroom sauce, sugar, lime juice, and soy sauce and stir to combine.
  6. Cook until noodles are heated through, about 2 minutes.
  7. Add mung-bean sprouts and stir until softened.
  8. Remove from heat and stir in peanuts and cilantro.
  9. Serve immediately.

Tips

  • If the noodles are undercooked or too dry, add a splash of water and stir-fry.
  • If vegan mushroom sauce is not available, you can substitute with light soy sauce.
