Vegan Sweet and Sour Cauliflower

Ingredients:

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons of soy sauce
  • 1 tablespoon of tomato paste
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of maple syrup
  • 2 tablespoons of water
  • 2 tablespoons of cornstarch
  • 1 tablespoons of sesame seeds

Instructions:

  1. Preheat oven to 375°F.
  2. Place cauliflower florets in a large bowl.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, and soy sauce.
  4. Toss until evenly coated.
  5. Spread cauliflower on a baking sheet and bake for 20 minutes, until golden brown.
  6. Meanwhile, in a small saucepan, combine tomato paste, apple cider vinegar, maple syrup, and water.
  7. Bring to a simmer and cook for 2 minutes.
  8. In a small bowl, whisk together cornstarch and 2 tablespoons of water.
  9. Slowly whisk the cornstarch slurry into the saucepan and cook for 1-2 minutes, until thickened.
  10. Remove from heat and stir in sesame seeds.
  11. Once the cauliflower is done baking, transfer to a large bowl.
  12. Pour the sweet and sour sauce over the cauliflower and toss until evenly coated.
  13. Serve warm.

Tips:

  • If you don't have apple cider vinegar, you can substitute with white wine vinegar or rice vinegar.
  • If you don't have sesame seeds, you can substitute with chopped peanuts or cashews.
