Vegan Sweet and Sour Cauliflower
Ingredients:
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons of soy sauce
- 1 tablespoon of tomato paste
- 2 tablespoons of apple cider vinegar
- 2 tablespoons of maple syrup
- 2 tablespoons of water
- 2 tablespoons of cornstarch
- 1 tablespoons of sesame seeds
Instructions:
- Preheat oven to 375°F.
- Place cauliflower florets in a large bowl.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, and soy sauce.
- Toss until evenly coated.
- Spread cauliflower on a baking sheet and bake for 20 minutes, until golden brown.
- Meanwhile, in a small saucepan, combine tomato paste, apple cider vinegar, maple syrup, and water.
- Bring to a simmer and cook for 2 minutes.
- In a small bowl, whisk together cornstarch and 2 tablespoons of water.
- Slowly whisk the cornstarch slurry into the saucepan and cook for 1-2 minutes, until thickened.
- Remove from heat and stir in sesame seeds.
- Once the cauliflower is done baking, transfer to a large bowl.
- Pour the sweet and sour sauce over the cauliflower and toss until evenly coated.
- Serve warm.
Tips:
- If you don't have apple cider vinegar, you can substitute with white wine vinegar or rice vinegar.
- If you don't have sesame seeds, you can substitute with chopped peanuts or cashews.
