Avocado Sushi

This vegan avocado sushi is the perfect dish for a light lunch or dinner. It's easy to make and only takes a few ingredients. The combination of the creamy avocado and the chewy sushi rice is simply delicious. The sesame seeds and soy sauce add a nice flavor, while the wasabi adds a bit of spice. Vegan Avocado Sushi for 2
Ingredients:
- 2 cups cooked sushi rice
- 2 ripe avocados
- 1 teaspoons rice vinegar
- 1/2 teaspoons salt
- 1 teaspoons sesame oil
- 2 sheets of nori seaweed
- 1 tablespoons sesame seeds
- 1 tablespoon soy sauce
Instructions:
- Cook the sushi rice according to the instructions on the package.
- Cut the avocados in half and remove the pit. Slice each half into 4-5 slices.
- In a bowl, mix the rice vinegar, salt, sesame oil.
- Place a sheet of nori seaweed on a sushi rolling mat.
- Spread the cooked sushi rice evenly over the nori seaweed.
- Place the avocado slices on top of the rice.
- Roll the sushi using the rolling mat.
- Cut the sushi roll into 8-10 pieces.
- Sprinkle sesame seeds over the rolls.
- Serve with soy sauce and wasabi.
