Vegan Ratatouille (Serving 2)
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 eggplant, diced
- 2 cloves garlic, minced
- 1/2 zucchini, diced
- 2 tomatoes, diced
- 1 teaspoon fresh basil
- 1 teaspoon fresh parsley
- Salt and pepper, to taste
Instructions:
- Heat oil in a large skillet over medium heat.
- Add onion, bell pepper and garlic; cook until vegetables are softened, about 5 minutes.
- Add zucchini, yellow squash and tomatoes. Cook until vegetables are tender, about 8 minutes.
