Vegan Ratatouille (Serving 2)


Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 eggplant, diced
  • 2 cloves garlic, minced
  • 1/2 zucchini, diced
  • 2 tomatoes, diced
  • 1 teaspoon fresh basil
  • 1 teaspoon fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Add onion, bell pepper and garlic; cook until vegetables are softened, about 5 minutes.
  3. Add zucchini, yellow squash and tomatoes. Cook until vegetables are tender, about 8 minutes.
  4. Stir in basil and parsley; season with salt and pepper.
