Tteokbokki

There are many variations of tteokbokki, including a royal court version that uses beef, various vegetables, and a soy sauce-based sauce. Tteokbokki is a beloved Korean dish that is known for its spicy, savory, and sweet flavors. Vegan Tteokbokki can be made richer and more delicious by adding meat substitutes instead of fish cake or boiled eggs, or adding various vegetables such as cabbage.

Vegan Tteokbokki (떡볶이)


Ingredients (serves 2):

  • 2 cups of vegan rice cakes
  • 1/2 cup of vegan fish cake (optional)
  • 2 tablespoons of gochujang
  • 2 tablespoons of soy sauce (optional)
  • 2 tablespoons of sugar
  • A handful of cabbage and green onions

Instructions:

  1. In a pot, combine water, gochujang, sugar, vegan fish cake and tteok. Stir well and bring to a boil.
  2. Add soy sauce, cabbage and stir well. Lower the heat to medium and let the ingredients cook for about 10~15 minutes until the tteok is soft and mixture gets little thick.
  3. Stir in the green onions and let the mixture cook for another 1-2 minutes.
  4. Serve hot. Enjoy!
