Vegan Japchae


Ingredients (serves 2):

  • 4 ounces glass noodles
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon garlic, minced
  • 2 tablespoons vegetable oil
  • 1/2 cup onion, thinly sliced
  • 1/2 cup carrot, julienned
  • 1/2 cup bell pepper, thinly sliced
  • 1/2 cup mushrooms, sliced
  • 1/2 cup spinach or broccoli
  • 1 tablespoon sesame seeds

Instructions:

  1. Soak the glass noodles in warm water for about 10 minutes.
  2. In a small bowl, mix together the soy sauce, sesame oil, sugar and garlic.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrot, bell pepper and mushrooms and spinach. Cook for about 5 minutes, stirring occasionally.
  4. Drain the noodles and add them to the skillet. Pour the sauce over the noodles and vegetables and mix until everything is well combined.
  5. Cook for another 5 minutes, stirring occasionally.
  6. Sprinkle the sesame seeds over the japchae and serve.
