Vegan Japchae
Ingredients (serves 2):
- 4 ounces glass noodles
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon sugar
- 1 tablespoon garlic, minced
- 2 tablespoons vegetable oil
- 1/2 cup onion, thinly sliced
- 1/2 cup carrot, julienned
- 1/2 cup bell pepper, thinly sliced
- 1/2 cup mushrooms, sliced
- 1/2 cup spinach or broccoli
- 1 tablespoon sesame seeds
Instructions:
- Soak the glass noodles in warm water for about 10 minutes.
- In a small bowl, mix together the soy sauce, sesame oil, sugar and garlic.
- Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrot, bell pepper and mushrooms and spinach. Cook for about 5 minutes, stirring occasionally.
- Drain the noodles and add them to the skillet. Pour the sauce over the noodles and vegetables and mix until everything is well combined.
- Cook for another 5 minutes, stirring occasionally.
- Sprinkle the sesame seeds over the japchae and serve.
